This is a very hot sauce typical of those found in South America. This recipe uses fresh garlic, chillies, coriander, cider vinegar and spices and is based on a sauce we sampled in Venezuela.
Use this sauce over barbecued meats and vegetables, as a marinade before barbecuing, mixed with crème fraiche or yogurt as a dip, to liven a rice or bean dish, and to add heat to stews or sauces.
